Makes a nice change - big thick juicy slices. If you cook it just right, it is still juicy and tender and the meat just peels off the rig cage in sections, and then the pin bones are visible and a cinch to pick out. The flesh peels away with a touch. Then savour the flavour. These were marinated in the ginger / garlic marinade I posted a week or so ago.
