Since getting the Treager the WSM sits alone occupying space much of the time.

Today was a single rack of back ribs supper so the WSM came to mind.

Unfortunately, my lump charcoal is mostly smalls, sooooooooo the burn temperature had a mind of its own and away it went. Had a hell of a time getting it to come down from 365* but eventually got it down to the 270s.

Wasn't sure what to expect and got a pleasant surprise when done. Moist tender ribs with a great bite.

Dry rubbed ribs, asparagus (1st plate), Caesar salad and creamed onions as sides.

Two bags of briquettes coming for the WSM. 🌻
