Quiet day here at home, so I smoked one of three chickens The Wife bought at Costco the other day.
Simple approach, Montreal Chicken Spice / Roasted Garlic and Peppers dusting on the bird. A mix of Apple and Gourmet blend pellets in the hopper. Super Smoked at 180* for an hour, cranked it up to 375* to crisp the skin and bring internal to temp.
Nice plump and juicy bird, there's some truly great lunch sandwiches on the way if I can keep myself from going back for more.
