I buy the prime rib when it goes on sale. $6.88 a pound on this chunk. I don't believe I have bought a steak any where since I started my own dry aging. It's worth the time and expense to do it.The colour and marbling of fat look bang on ! At 1.5 or 2 inch cuts those are 50 dollar steaks at the very least if not more ?
45 days seems like the right amount of time.I've done one 60 days once.There is a definite difference in flavour with the added time.That looks so perfectly aged, wish I could try just one steak. Please.
