Todays the day ! " Brisket"

Up at 445am preheat smoker and season the meat and the brisket is in the smoke... Going to be a long day but the end result hopefully pays off.

Finally figured out how to post pics from my phone...

Stall around noon 162° wrapped and back in till 5 pm 197° out wrapped and in cooler for 2hrs. Turned out amazing!! Will try different wood chips next time (used a mix of hickory and mesquite).

Nice bark, I like the glistening on the sllices, and the texture of the meat looks spot on. Yum! .

Thanks for all your input hvyhaul,(I seen yours and couldn't resist). Everyone truly loved it, the meat was so tender and juicey. My sister offered to buy the next 1 if I'll smoke it again!
Can't wait....
