Overnight dry rub marinade in fajita seasonings, 4 hours in the smoker at 195 wrapped in tinfoil, 2 more at 275 exposed to the smoke, followed by a reverse sear, with the juices drizzled over it and homemade q sauce and fresh local corn with potato salad in olive oil and a hint of cider vinegar with chives, salt and pepper.
