what do you do with the tallow @Ozzy111 ?

I might use some on my next brisket as I seen people do that on Youtube when wrapping.If I make more,i'll use it to make fries in my deep fryer.

The last two briskets I cooked didn't need the usual radical fat trimming, nor did they render the normal copious amount of fat.

Still great flavour and butter tender, just didn't have the huge layer of white fat one normally sees.
