Sensitive Downrigger rod?

You should try the Chamberlin release. You can set the sensitivity. I have set it up and it has released on a perch.

You could use a hydro pole for a rod and still know when an 10” perch hits or the lure gets fouled with weeds....
 
i use the fenwick mooching rods for walleye. I didn't like the short butt handles so bought cork handle extensions and added 10" to the butt.....great rods and coupled with chamberlains they work well on Lake E
 
I would use a 7 ft ml shimano in the same brand as my others to keep it bent down to ease the rest coming over the top. There a one piece but not much longer than a two piece 10.5 dipsey.
