Dry rub accompanied by rice in stock and spices. As Martha would say.... and it was good.

I finally got my flyers and seen that sale at Zhers , good price 1.99 Lb. a big bird will run about 8 bucks but they have smaller ones. I did notice that the Thigh and Drumstick meat was pale in colour but they are factory raised and not free range. I was going to Jerk marinade one for about 2 days then stuff it full of fresh Thyme and a finishing glaze of Franks Stinging Honey Garlic. Maybe get two and try my Orange juice/Five spice//Soya sauce/Ginger marinade and I won't forget the Chili flakes this time either.

Picked up 8 of them today. Gonna prep, vac seal and freeze them tomorrow.

I've got too much red pepper jelly from last fall. Thinking about attempting a marinade with some for dinner tomorrow night. We'll see how it goes.
