I have a question just based on curiosity? My entire life catfish have been a nuisance fish that we used to toss in the weeds. About 10 years ago I was out in Selkirk, Manitoba for a month and we stayed at a place right on the red river so we caught a fair amount of catfish and the lady who ran the place we were staying cooked up a few for us and they we’re actually quite good. How do the ones here do as table fare?
Smaller channel cats and brown bullheads are delicious when bled, iced and filleted properly. When they aren't handled and prepared properly it's more like eating mud.
