Got a call from my beef farmer neighbour yesterday that one of his red angus beef cattle had broke its leg and if I came over a dispatched it I could have 1200 lbs of free beef. So an hour later I was doing my best impression of a mafia hitman! Went over last evening after it spent the afteroon hanging and quartered it (6 pieces actually). Once it was skinned and wrapped in game bags it is now hanging in my cooler for 21/28 days, Then I shall attempt to imitate that beautiful looking brisket myself!!
