First attempt at Beef Wellington for New Years Day. It was delicious but wow is it a lot of work, not something I would cook regularly LOL

I took it off at 127 and it likely got to 130 while resting

Presidents Choice use to make a Beef and a Salmon Wellington's , they were great ! Not cheap but great !
