Transporting frozen perch

When transporting frozen filets from a trip up North what methods do you use to ensure that if you are stopped that the CO's can count the filets to determine the no. of fish. I haven't done this for years and we used to just freeze them in a bag with water but of course there is no way then to get an accurate count. Any suggestions would be appreciated. Thanks.

Put your fillets in a bag and leave a patch of skin on your catch also.Count your fillets in each bag and write the #of fish per bag on the side of the bag with a marker.

Generally we leave skin on and both fillets still attached to each other....then place too fish in zip lock and freeze flat....driving home from Cochrane my fish partially though enough to skin and Debone when I get home ..then vacuum sealed
