They don't go as golden brown with lard as they do with oil... Just a dusting of flour and pepper... No lack of taste though... Matched with a rainbow salad with coleslaw dressing... Just crumbs left... lol
Looks tasty! I love smelts. And lard! You're right about the less browning, I think I fry at a lower temperature in lard than oil.
Try this stuff instead of flour some time: Gluten free Bisquick. A friend has celiac disease so I bought this when they came for a fish fry, and it actually works better than regular white flour. It turns out super crispy, I think because of all the rice flour, and it browns nicely (the added baking soda and sugars help there).
