Handheld enchiladas- Homemade corn tortillas topped with pan-fried seasoned chicken, pico de gallo and topped with homemade enchilada sauce ( guajillo and ancho peppers roasted in a cast iron pan along with garlic, onion and tomato)




And for dessert, chocolate marshmallow swirled brownies…
