New to fishing for pics usually I am on Ontario but what is a good wind direction and speed to fish burrell in a 17ft boat thanks

Winds from the southerly direction tend to cause higher waves than those from the northern direction.
What wave heights people are comfortable fishing in depends on the people on board.
We fish from a 17 footer and like to keep it at 3' or less.
Much over 3' makes fishing other than straight with the wind difficult to steer & rolls side to side or up in down. Fishing into the waves and the boat can quickly turn on you if you are not quick on corrections.
