Over the top chili

I did another batch of "Over the top chili" yesterday on my Weber kettle. Very easy to do with a Traegar or any pellet grill as well.

The chili is started inside on the stove with a dutch oven except without ground beef. Once the base is completed the dutch oven is put into the kettle along with a rack on top with the seasoned ground beef on it. I use lean ground beef as all the grease goes into the dutch oven and I don't want it swimming.

I use hickory chips to smoke the ground beef to 160 degrees then pull the meat and chop it up and add it to the dutch oven and continue smoking for another couple hours. The ground beef takes on smoke really well. This is the only way my son wants me making it anymore!
