Looks like they are a bit behind this year, compared to last. Hopefully there will be enough to harvest a batch to make potato soup for my company this weekend.

I can't seem to find a shed in the forest but can find a golf ball in a corn field on the way there 🤷‍♂️

The caution is not to take too much from your patch due to the length of time it takes for them to renew themselves. I had a great patch until some commercial harvester went through it and practically stripped it clean.... what a dink !

Taking a few is one thing but taking a few bushel baskets full is another. Those little gems demand top dollar at those fancy restaurants in the big cities. Same for the morels that should be popping up soon.

Reminds me of that slogan catch your limit and limit your catch. 100% agree. A handful is enough for the two of us

Somehow got the ambition to make a batch of potato and wild leek soup today after two days in the backwoods exploring new trout grounds. Probably the heat today and forecast of snow Wednesday...

Don't really have measurements, I just start off boiling cubed potatoes the same as making them mashed. I add four cubes of vegetable stock into the boiling water. Lightly hand mash to leave good size chunks in the mix.

Dice and sautee the ramps, garlic and Vidalia onion with salted butter. Then mix back into the pot adding about half a 500ml tub of sour cream and a cup of milk while it's back to a medium boil.

Lastly I'll fry up a pound of thick cut bacon, dice and add to the stock 👌
