Like others, mother nature put the wife's back and mine to the test yesterday and today.

Got out two sections of back ribs. Dusted, added extra demerara sugar and smoked at 220* on super smoke with apple pellets for 3 1/2 hrs.

Sauced for another hour and then 275* to finish.

Good results for a snow day.🌻

I need a windbreak like you have @hvyhaul . Do you use a lot more pellets in the winter?

Starting from an MT hopper (always MT it) 5 of these scoops covered yesterday's cook from ignition to shutdown 5 hrs.

Normally used for my bird seed so they aren't that big.

I'd say yes to more, but not markedly increased (a lot more) surprisingly.

The shed definitely makes a big difference.

I have lights, Muskoka chairs, but sadly no tunes, yet.🌻
 
did you wrap them in tinfoil at all? i.e. did you do the whole 3-2-1 thing? Cook for 3, wrap for 2, then sauce and finish for 1 hour.

Not this time, bare naked till the end.

This was only 2 sections, 1 was 4 bones other thinner one was 5.

I didn't think wrapping (I use b paper) was required. 🌻
