You don't have to buy a Thermoworks Thermapen instant read pen to have an accurate pen.

I use mine all the time for temps and poking/probing for the tenderness I am looking to get. 🌻
 
Thanks hvyhaul for the info I also have one of that type thermometer. I hope to put mine on this weekend if all goes well . And you are correct, Aaron Franklins smoking your 1st brisket.(Will be my 2nd try)

Along with sliced mushrooms, baby carrots, diced onions, beans, broccoli peas, deep rich gravy, mashed potato top.

Love me some brisket Shepherd's Pie after every smoke. 😊 🌻
