Ribs on the WSM

Ok........

I need to use the WSM more often. LOL

Used an all Apple wood fire, not the normal charcoal embers and wood splints. Smokey fire to start but did clean up nicely over the cook.

Results are as follows :

Super smokey but fortunately not bitter
Exterior much darker than mahogany target
Meat is a little over but still tender and moist.
Strangely, no smoke ring.

Not my best, but definitely a pass. 🌻
