Went out for a walk and check on one of my usual productive wild leeks spots today. Still a bit early but they are coming along nicely 👍

Looking forward to your recipe, I've tried a couple different ones and never seemed to "nail it".

Do you harvest the whole thing, bulbs and all? I try to leave as many bulbs behind as I can, but they are great for cooking with, usually grab a handful and the rest just take from the ground up. Always gets me excited to walk up on them this time of the year, I didn't realize how rare they can be, in busy areas they get cleaned right out.
 
The forecast tonight and tomorrow morning looks very wet so i will be using day old ramps in my soup. The patch of wild leeks has done well in the last week. I only take a few from each bunch to keep them going for years to come. Too tired to cook a batch tonight so stay tuned (y)

Made my first batch of soup today and it tastes amazing! This recipe is very simple to make

- I filled about 1/3 to 1/2 of a standard 6.5qt (6.2L) pot with potatoes
- Add 2L of chicken or vegetable stock and boil till they are soft
- lightly mix with a potato masher so there are good chunks of potato in it. Then let it all stand while making the rest to mix in

- I sauteed the ramps and some Vidalia Onion in bacon grease to add flavor
- mixed in 250ml sour cream
- 250ml milk
- couple table spoons of salted butter
- cut up the bacon and pemeal bacon

Double bacon makes it even better!!

Let it all simmer for a bit to thicken and enjoy (y)

Confession... when I first saw the thread titled 'on the hunt for ramps' I figured it was a discussion about boat ramps and it had accidentally landed in the 'food' section. I've learned about the other kind of ramps (thanks!) and ... your soup looks delicious! :shame:

The same here @Mrs. Stomp such as yourself,I thought that @Extra Virgin was going to mention boat ramps,therefore I was getting excited about a list of boat ramps that he was going to post. lol 🤣 I asked my wife,and she never heard the wild leeks called ramps either.The soup does look terrific indeed,and good job @Extra Virgin 👏👍🙂

Not much to do now but hunt for a pile of leeks and make an enormous pot of soup for my friends and family 👍 Same recipe just quadrupled
