First time making salami with deer and I used pork and 15 pounds and I used beef and 15 pounds and I did 3 pounds straight deer. Damn, is it good and it only cost me was a little bit of pork and beef and some seasoning, my labor, and a little help from the wife

High mountain seasoning, garlic and crack pepper. Me and the daughter did a tasting of all three damn, damn is it good.
 
did you do the stuffing or buy it that way? Can you smoke something that is already stuffed in casing?
 
Yeah, the casing has some small holes in it and it’s designed to be in a smoker meat ratio with 3 pounds of pork in 12 pounds of deer. I also did the same ratio and beef and deer. And I did some with just straight deer. The pork in the beef one tasted slightly better, but the straight deer is quite good. He’s my grinder with sausage adapter, to fill the casings.

Looks good I’ll have to try that next year. I just found some scraps that didn’t get ground from last fall and did them up with some pork fat. Made 18 good size burgers. It was a welcome find as we are down to ground and sausage from last seasons haul!
