I've been looking through a bunch of recipes for Beef Jerky on the smoker and they call for several cuts of meats and different marinades. I've landed on a Sirloin Tip Roast (on sale at Valu-Mart for 3.99) and a marinade using elements from several recipes and it's going to include soy sauce, pineapple juice, brown sugar, honey, garlic and ginger. Going to marinate it (after I've sliced it) for 24 hours then hand it over to @stomp to smoke it. Wish me luck!
